Good nutrition plays a fundamental role in people’s health and quality of life. Veganism and vegetarianism is a nutritional option that is becoming increasingly common in Western countries.
Vegan and vegetarian diets are, in general, rich in nutrients that are beneficial to health such as dietary fiber, magnesium, potassium, vitamins C and E, folic acid, carotenoids, polyphenols and other phytochemicals.
Even so, people who follow a vegan or vegetarian diet usually consume fewer calories than a regular diet. As in any other nutritional option that excludes large food groups, following a vegan or vegetarian diet must be controlled and supervised by specialists in order to prevent the deficit of certain nutrients found in foods of animal origin.
For this reason it is important to carry out this study periodically (at least once a year) to check that the person is making a correct and sufficient supply of nutrients to the body.
